Recipe: Balsamic roasted strawberries and whipped feta

An impressive appetizer or a light lunch even. If you haven’t tried roasting strawberries yet then you’re missing out, the flavor gets so deep and so rich, and paired with the airy whipped feta….yumm!

Balsamic Roasted Strawberries and Whipped Feta

Ingredients

  • 1 quart strawberries, washed, hulled, and halved
  • 2 tbsp traditional balsamic vinegar
  • 3 tsp honey
  • 1/2 tsp cracked black pepper
  • 1/2 tsp salt
  • 8 0z feta
  • 1/2 cup Greek yogurt
  • 2 tbsp olive oil
  • 8 leaves of fresh basil, chopped
  • 1/2 tsp fresh cracked black pepper

Instructions

  1. Preheat the oven to 350 and line a baking sheet with parchment paper.
  2. Place the strawberries on the baking sheet.
  3. Drizzle with the balsamic vinegar, honey, pepper, and salt.
  4. Roast for 30 minutes.’
  5. Meanwhile add the feta, yogurt, olive oil, basil and salt and pepper to a food processor and process until smooth, refrigerate until needed.
  6. To serve place the strawberries in one bowl and the feta in another, drizzle the feta with a bit more honey.
  7. Serve with warm baguette. Suggested serving is to spread the baguette with the whipped feta and then top with the warm strawberries.
